As Bill Murray famously said in Lost in Translation: “Make it Suntory time.” London is taking that to heart this autumn.

In one of the capital’s largest ever Japanese whisky bar takeovers, 24 of London’s leading venues are uniting to celebrate Hibiki Japanese Harmony – the award-winning blend from The House of Suntory.

Each bar will serve an exclusive cocktail inspired by Japanese tradition and London’s cutting-edge mixology scene.

The initiative coincides with the return of the Grand Sumo Tournament to the Royal Albert Hall – the first in 34 years – with Hibiki partnering some of London’s most acclaimed bars to interpret Japanese ritual and artistry through modern cocktails.

From now until December, venues across the capital are offering one-of-a-kind drinks blending heritage with innovation. Expect everything from matcha-whisked Old Fashioneds to elegant Highballs and creations inspired by Tokyo’s listening bars.

A reimagining of the Vieux Carré with Hibiki and Aubrey Junmai Sake, symbolising new beginnings and transformation.

Hibiki cocktail

Hibiki Japanese Harmony, Agave, Verjus, Gyokuro. A cocktail named after the famous belt (mawashi) of sumo wrestlers. Served as a carbonated highball with Gyokuro tea. 

Nipperkin, Mayfair

Tea & Harmony

Hibiki cocktail

A contemporary nod to the Japanese tea ceremony, pairing delicate flavours of fermented tea with frozen Hibiki whisky. 

Waltz, Shoreditch

Matcha Old Fashioned

Hibiki cocktail

A take on the Old-Fashioned cocktail, where the matcha is whisked (not stirred) to create layers of depth as the ice melts, offering a quiet flavour journey in a glass.

And why 24 bars? Not for 24-hour licenses. (Although, we’re down for that.) The 24 bars also nod to the 24 facets of Hibiki’s iconic bottle, which symbolises the 24 Sekki seasons of Japan, a tribute to harmony with nature and rhythms that shape whisky maturation. Kanpai!
